The Hot Brown sandwich was first created in the 1920s for guests of the Brown Hotel in Louisville as a late-night (or, as was often the case, early-morning) meal for partygoers. This open-faced sandwich of turkey, bacon and Mornay sauce – broiled to golden perfection – is now a Kentucky tradition continued at a number of Louisville-area restaurants.
